Annie Falk x 240sweet S’more Collaboration

We came across Annie Falk’s recipe, and we decided to give it a go with our gourmet marshmallows and graham crackers

• 4 bars (1.55 ounces/43 g each) organic milk chocolate
• 16 organic 240sweet gourmet graham crackers
• ½ cup organic confectioners’ sugar
• ³⁄4 cup (1½ sticks/170 g) organic butter, melted
• Black Hawaiian sea salt
• 24 240sweet Very Vanilla Bean Gourmet Marshmallows

Preheat the oven to 350°F. Grease a 24-cup mini muffin pan.

Unwrap and break 2 chocolate bars into 24 pieces and set them aside.

In a food processor, crush the graham crackers into fine crumbs. Transfer them to a small mixing bowl and combine them with the confectioners’ sugar and melted butter. Immediately place 1 tablespoon of the crumb mixture in each muffin well; press the crumbs up the sides to form cups. Bake until the edges begin to bubble slightly, about 4 minutes.

Remove the pan from the oven, drop 1 piece of chocolate into each cup, and sprinkle lightly with sea salt. Place the 240sweet marshmallow over the salted chocolate in each cup. Return the pan to the oven until the marshmallows are slightly softened, but not melted, 3 to 4 minutes. Let them cool completely.

Melt the remaining 2 bars of chocolate in a double boiler or in a non¬reactive bowl set over a hot water bath. Transfer it to a pastry bag and pipe the warm chocolate over the tops of the marshmallows. Serve at room temperature.

Meet Us: Ashton Barrett-Kelsay

We've been fortunate to have Ashton Barrett-Kelsay on our 240sweet team for the past two years. She works part-time with us at events and in packaging marshmallows. Fun fact: Ashtons' wife, mother, sister, and best friend all work with us, too!

Full time, Ashton serves Active Duty in the Department of Defense's Yellow Ribbon Reintegration Program. She loves being able to give back to those who serve. 

In her free time, Ashton enjoys hiking, painting, angling, and toasting 240sweet Bourbon Brown Sugar marshmallows. She's pretty happy that fall is here, bringing back all that is pumpkin spice.

Christmas in July 2015: Chef Alexa and Sam wish for a concession trailer

 

 

Chef Alexa and Sam's big gift for this year is a concession trailer to come see you. That way, we can delight you and new friends with gourmet s'mores and frozen hot chocolate. As you may know, the weather in the summer can be too hot for us to do outdoor festivals selling bags of marshmallows. The puffs we work so hard to make melt in the sun and heat. With an air-conditioned concession trailer, we can venture out across the country to share the marshmallow love.

 

 We estimate that a vintage trailer with updated safety and kitchen equipment (and a sassy wrap) will cost $10,000. Please help us live our dream of year-round marshmallow glory.

Yes, it is that time of year...for our 5th annual Christmas in July fund-raiser. Thank you to everyone who has invested in us over the years. Did you know that we have built 240sweet without taking out hefty high-interest loans? 

What is Christmas in July? 
Each year, we hold this fund-raiser to make improvements to our operations. You "invest" in us this month by purchasing vouchers in varying increments. In November and December, those vouchers are worth double the amount that you "loan" to us. We use your investment to grow. It is like Christmas for us--and you save on wonderful, handmade gifts for your clients, family, and friends. Just remember how you felt when you first tasted our puffs--Share that feeling and impress everyone on your holiday list.

What do you do with the money? 
You helped us procure new display racks, decor, and signage for expo sales. We also purchased new computers and food photography. Chef Alexa and crew appreciate the new marshmallow cutting knife and thermometers.We did this all with investments from people like you.

In this hands-on class, Chef Alexa Lemley will not only teach you how to make marshmallows but also how to cut, powder, and bag some that you take home! Celebrating the Sap's Donut

Did you know that Chef Alexa comes from family of food innovators? Her Great Uncle Sap invented the mass-produced yeast donut (and a lot of people say the pork tenderloin sandwich) in our hometown of Columbus.

This weekend, we're celebrating the Sap's Donut at our Artisan Foodworks Market. Chef Alexa will be frying up treats in her ode to her great uncle. Read more about his legacy, here.

The Little Kitty

Last November, we welcomed a new team member, the Little Kitty. Originally from Chicago, Illinois, this Ragdoll kitten joined Chef Alexa, Sam, and their other fur children in Columbus, Indiana. He quickly became a favorite member of our 240sweet Artisan Foodworks team and was designated the Chief Purrfection Officer (CPO). 

When the Little Kitty isn't supervising our office activities, he can be found traveling the United States. He loves to ride in the car wearing stylish outfits and meeting people. New friends often remark about how sweet and adorable he is--often they are amazed to see the Little Kitty purring his way through social and work obligations with ease and charm. We doubt there has ever been a better CPO.  

A big fan of shellfish, the Little Kitty loves Chef Alexa's lobster rolls and shrimp dishes. For relaxation and fun, he enjoys playing games on the iPad, swatting at the Turbo Go Round, and frolicking with his adopted animal brothers and sisters.

The Little Kitty celebrates spring with one of his favorite toys.

Meet Us: The Mother- Christine Lemley

Like every wonderful idea or creation, it all starts somewhere. With Christine being Chef Alexa's mother, 240sweet wouldn't be possible without her. Inquisitive, devoted, and bursting at the seams with knowledge, she makes a large impact here at 240sweet. She is The Mother, and she makes 240sweet that much sweeter. She helps anyway she can here at the marshmallow studio. You may see her bouncing ideas around with her family, or toasting marshmallows for you to try at an event.

Her most favorite things include cycling, reading, cooking, enjoying fine dining, and even wine and spirits tastings. She's full of life and so is her free time.
She's busy toasting marshmallows, but not too busy to taste them. Her favorite 240sweet flavor is Churro- which of course is a wonderful choice.

Here she can be seen with her husband Max Lemley, carving the turkey on Thanksgiving.  A Rockwell Painting perfect picture.

If Christine were to choose a super power, she'd choose  to be able to "make connection to the collective consciousness on a regular basis." Most people choose x-ray vision or super speed, but the mother isn't "most people."
