Annie Falk x 240sweet S’more Collaboration

We came across Annie Falk’s recipe, and we decided to give it a go with our gourmet marshmallows and graham crackers

  • 4 bars (1.55 ounces/43 g each) organic milk chocolate
  • 16 organic 240sweet gourmet graham crackers
  • ½ cup organic confectioners’ sugar
  • ³⁄4 cup (1½ sticks/170 g) organic butter, melted
  • Black Hawaiian sea salt
  • 24 240sweet Very Vanilla Bean Gourmet Marshmallows
Preheat the oven to 350°F. Grease a 24-cup mini muffin pan.
Unwrap and break 2 chocolate bars into 24 pieces and set them aside.
In a food processor, crush the graham crackers into fine crumbs. Transfer them to a small mixing bowl and combine them with the confectioners’ sugar and melted butter. Immediately place 1 tablespoon of the crumb mixture in each muffin well; press the crumbs up the sides to form cups. Bake until the edges begin to bubble slightly, about 4 minutes.

Remove the pan from the oven, drop 1 piece of chocolate into each cup, and sprinkle lightly with sea salt. Place the 240sweet marshmallow over the salted chocolate in each cup. Return the pan to the oven until the marshmallows are slightly softened, but not melted, 3 to 4 minutes. Let them cool completely.

Melt the remaining 2 bars of chocolate in a double boiler or in a non¬reactive bowl set over a hot water bath. Transfer it to a pastry bag and pipe the warm chocolate over the tops of the marshmallows. Serve at room temperature.

Makes 24 pieces

Mary Willey: Wishes for new shelving and display items for pushing puffs

Meet Us
Mary Willey

Full-time, Mary is a Special Education Paraprofessional in Early Childhood. Almost every week, you can find her volunteering at the Fishers food pantry. She regularly enjoys swimming, biking, walking, and gardening. This June, her two eldest sons were married. Their rehearsal dinners were in Mary's beautiful back yard, decorated with bright flowers, over 25 varieties of hosta, and her handmade mosaics. When the youngest son is married, we're pretty sure his dinner will be there, too.

Since the beginning, Mary has been an important part of the 240sweet team. She lost count a long time ago of how many early mornings she waited for her sister Sam to pick her up to go to farmers' markets and shows. Mary also uses her creativity to create new dishes with 240sweet puffs. Her S'mores Quesadilla is our favorite. Read the recipe here. Did you know that the Salty Caramel Swirl puffs were originally created as a Christmas gift for her? We bet you're glad she loves fleur de sel caramels.

Christmas in July Wish List Item

"One of the highlights of doing events like the Junior League and artisan marketplaces is seeing all of the creativity of the displays the vendors have. I would love a professional display for 240sweet that showcases our great products!" says Mary. With her enthusiasm, it is hard for anyone to turn down a sample. Mary continues to say, "More people would stop to try puffs if they were welcomed into a professional display."

We agree. Would you have stopped to try a world-class marshmallow if not for the exuberance of the people offering samples? We need a display that communicates how addictively delicious 240sweet puffs are. Click here to help us grow.

Professional booth display

With a professional booth display, we will communicate to people how special our 240sweet puffs are. Can you see the giant pictures of our puffs on the backdrop? We also need some new shelves and carpeting to make a booth that will pop.
Estimate cost: $2000

S'mores Quesadilla Recipe

Thank you to Mary Willey for creating and sharing this fun recipe for S'mores Quesadillas! We appreciate that you put a picture up on our 240sweet Facebook page. We hope that you wear your Happy Camper thank you tee shirt to Puff Fest on July 12!

Please like and comment on Mary' original post.

S'mores Quesadilla

  • 2 12 inch flour tortillas
  • ¼ cup Best Boy & Co. fudge sauce
  • 1 favor pack of 240sweet Crunchy Cinnamon puffs
  • Tablespoon of butter, divided

1.      Preheat griddle to medium

2.      Start with one tortilla. Spread fudge sauce evenly on one side of the tortilla, leaving about half an inch at the edge. Scatter the marshmallows over the fudge sauce. Place the other tortilla on top.

3.      Melt butter on griddle.

4.      Place quesadilla on the griddle. Let it brown. Flip and let the other side brown. Hold in warm oven if you are making more than one.

5.      Remove to a cutting board and cut into wedges.

6.      Take a picture of friends and family enjoying it and post it online, tagging @240sweet.

Notes:

Mary (Sam's sister) used pan edges to make the quesadillas. That's why the puffs look so big in the picture. She cut them up. If you want, you can also cut up the Petite Puffs to make them melt faster.

Mary also used a quesadilla maker. You can do that, too.

You can use any flavor of 240sweet puffs that you like.

Also, you can substitute other fudge sauce. Best Boy & Co. brand sauces are favorites here at 240sweet and the Willey household.

Christmas in July

Christmas in July

Share the love this holiday season by investing in us this month

Receive a 100% return when you help our business grow

Christmas already?

Yes, it is that time of year...for our 4th annual Christmas in July fund-raiser. Thank you to everyone who has invested in us over the years. Because of you, we have been able to build 240sweet without outside investors or loans with high interest rates. Last year, we were able to purchase a new office printer, buy a purple bus, and plan our move to a space that is 3 times larger because of you.

What is Christmas in July?
Each year, we hold this fund-raiser to make improvements to our operations. You invest in us this month by purchasing vouchers in varying increments. In November and December, those vouchers are worth double the amount that you "loan" to us. We use your investment to grow. It is like Christmas for us--and you save on wonderful, handmade gifts for your clients, family, and friends.

How do I participate?
It is easy! Just order vouchers amount from our webstore or by calling Sam at 812.372.9898.

Our Christmas in July Wish List
We asked our 240sweet crew what they would like...

Becca wants wire shelving units

When Sam and Chef Alexa go out of town to push puffs, they take the wire racks from our 240sweet Studio. If we had a couple more, we could put out all of the marshmallows at one time, even when they are gone.
Estimated cost: 100.00 each

Paul would really appreciate having a QuickBooks register and bar code printer

As the Business Manager, it is my job to keep things running smoothly. It would be great for customer service if we didn't have to go to the office to run someone's credit card when they come in to buy marshmallows. And with the new items from other artisans being available, a bar code printer will help us keep track of everything.
Estimated cost: 900.00

Wan dreams of an on-demand label printer

I wish for a top-notch label printer! Currently, we use a document printer to make all of the labels. A new printer would speed up our production and allow us to make better labels.
Estimated cost: 3000.00

Joseph requests new purple chef's coats

The rest of the staff and I would feel especially sharp and cut marshmallows faster in matching purple chef's coats
Estimated cost: 40.00 each

Chef Alexa needs a good candy thermometer

Aack! I killed yet another candy thermometer last night! We had to stop production to go out and buy one. I wish I just had a good digital one.
Estimated cost: 50.00

And the list goes on...So please help us improve our services to you!

Recipe: Brown Sugar Pecan Shortbread

Brown Sugar Pecan Shortbread
We stumbled upon this mystery blogger who used Bourbon Barrel Aged Demerara Sugar from 240Sweet in a recipe! Do you know who this is? Either way, this shortbread sounds yummy.

Brown Sugar Pecan Shortbread
1 ¼ c flour
½ c pecan pieces, toasted
¼ t salt
10 T butter, softened*
¼ c sugar
¼ c brown sugar
1 ½ t vanilla
Coarse sugar for sprinkling (something like sugar in the raw would be good)
⅓ c chopped pecans for topping, untoasted
  • Place the flour, toasted pecans and salt in a food processor and pulse until finely ground, about 15 seconds.
  • In a stand mixer, cream the butter and sugars until light and fluffy. Add vanilla. Blend in flour mixture at low speed until just combined.
  • Press the dough into a greased 8 or 9 inch square pan. Sprinkle with the coarse sugar and untoasted pecans.
  • Bake at 325 for about 20-25 minutes. Keep an eye on it, the edges will start to get a little toasted and the center should just look set.
Have you made something with any of our sugars, extracts, or puffs? Share with us: sam@240sweet.com
